"It's healthy down-home cooking," says Chef Bill Greenwood. "We're not fancy-food folks here. I'm a gardener and I just love picking fresh collards and lettuce and serving 'em up that day." How green is Chef Greenwood's garden? Well, PBS once produced a piece about his verdant veggie patch. At both Greenwood's on Green St. and the chef's nearby eatery Swallow in the Hollow, the cooks aren't afraid of making tasty vegetables a central part of the meal. Diehard carnivores can relax, though -- fried chicken, seasonal crayfish cakes, shrimp with grits and other meaty favorites are still on the menu, albeit with heart-smart twists.
