Upon ordering any of the house specialties, chances are the waiter will pluck the fish straight from the tank and bring it to the table for the final go-ahead before it hits the sizzling wok. Quiet, dutiful servers ensure water glasses stay filled.The FoodThe seafood specials are quite delicious and, judging by the hordes of Chinese ex-pats munching away, authentically prepared. The Alaskan King Crab, though pricey, is a real treat: Dusted with cornstarch and then pan-fried with a delicate scallion-ginger sauce, the result is exceptional. Other great seafood specials include the conch with black bean sauce and any of the whole steamed-fish dishes. Landlubbers stick to familiar stir-fries and dishes like salted chicken (roasted in salt, yielding notably moist meat).
