Some say that Einstein has the best bagels in Charlotte, and judging from the standing-room-only status of this hip former gas station, they may be right. One thing is for certain: They certainly have the most eclectic variety. From spinach to chocolate chip, to walnut and apple, the selection is the very definition of inventiveness. No wonder they named it after Albert Einstein. Bagels need a true balance of crunchy and chewy, and Einstein Bros will leave you wanting more. So much so, you're guaranteed to order an extra dozen to take home for the freezer. There are a few seats to rest your hungry frame, but it gets crowded early and stays that way most of the day, so you've been warned. If the bagels don't lure you in the morning for breakfast, the soups will hook you in the afternoon. The toppings and fillings are always fresh and run the gamut of meats and cheeses and vegetables. If you're feeling a little rowdy, check out the original Bagel Dog -- like a hot dog except not, like a bagel except not. It's an invention all its own, especially when dipped in a puddle of mustard.
