Rate and Write a Review Way back when the West was wild and eager miners were pouring into Colorado looking to get very rich very quick, the Buckhorn Exchange applied for its liquor license and got it. That liquor license was the very first bestowed in the Centennial State, and over time the Buckhorn became steeped in legends involving one of Buffalo Bill's riders (who founded the eatery) and visits from famed outdoorsman like Teddy Roosevelt. The restaurant is considered by many to be one of Denver's quintessential historical landmarks, the frequent choice for locals with out-of-town guests and old West enthusiasts alike. While wannabe buckaroos come to eyeball the vintage gun collection and other tokens of the yippee-ki-yay days, the hungry come for one thing: meat and lots of it. One glance around the dining rooms convinces carnivores that they're in the right spot: animal trophies, including deer and buffalo, line the ruby red walls. The meat-laden menu is the other eye-catching feature of the Buckhorn Exchange, sporting entries like rattlesnake in a red chile marinade, tasty Rocky Mountain Oysters (it is best to ask what these are before ordering) and elk. Adventurous groups of four can order a single, four-pound steak. Eaters best bring their appetites, their cameras and a desire to travel back to Colorado circa 1893.
