With roots in Boulder and outposts all over Colorado, this overindulgent breakfast, brunch, and lunch homage to the Bayou invites baggy pants and belt loosening. Pay heed and you'll have space for the indelible French Quarter classics, such as the eggs Sardou with diabolically rich creamed spinach, shrimp, poached eggs, and housemade hollandaise served with grits and a buttermilk biscuit the size of a sumo wrestler's forearm. You can sit solo at the bar or come with a crowd to cozy up in the red brick interior replete with jazzy wall adornments. Louisiana loyalists may quibble about the finer points in the gumbo, crawfish etouffee, or shrimp Creole, but for most patrons, the fare rings true. The Cajun Bloody Mary is a fine way to start the morning, and the chicory coffee and homemade hot chocolate are reasons enough to brave the perpetual wait for a table.
