Inside the walls of the infamous Merc you find just about everything you need to add some spice to your life. This place has been a favorite hangout for local artists, poets, playwrights and musicians for as long as we can remember. The menu is an eclectic mix of vegetarian and meaty combinations; they serve breakfast on the weekends and appetizers, supper and desserts at nightly. Brunch includes entrees like the Gulf Coast omelet with grilled shrimp, avocado, vegetarian green chili and cheese, eggs Florentine and Huevo Ranchero con Grilled Lamb. It's not all vegetarian, though. If you have a hankering for a burger, the Merc has big juicy ones, complete with fries.At night, Mercury becomes a dance mecca, with swing dancing and lessons on Tuesday, Thursday and Sundays; salsa on Wednesdays; and sexy tango on Fridays.

The service was not what you would expect, the entrees were slow to come out. The food was on the bland side but fresh. Surprise was seeing the local wine, Two Rivers. You can't judge a book by it's cover and that is the case for this restaurant.

I went down there based on it's #1 rating, and I was not disappointed. However, there's a place up in Boulder right across from the campus...Half Fast Subs...that has a wonderful selection of veggie sandwiches. Probably the largest veggie choice I've encountered in the Denver area. Try their thai tempeh salad or tempeh parmesan sub.
