Designed to mirror New York City's most popular celebrity-laden lounges, Caramel aims for a dark, hipster underground feel. Low, comfy seats line the modern interior, and giant windows overlook the casino (thankfully the space remains insulated from the clank of slot machines). Like its stylishly understated forebears on the east coast, Caramel is all about the martinis. Try the Oreo shake, a decadent blend of Bailey's, Godiva liqueur, cream and cookie crumbles. Heaven doesn't come cheap though -- at a potent $15, it's a cookie monster. For a taste of Vegas' underworld origins, try a Sicilian Kiss, straight-up. Wine, beer, mixed drinks and limited food items are also available. While the bar's opening drew the hippest in Hollywood, including Bruce Willis and Christian Slater, it remains to be seen whether Caramel can rise above Vegas' typical in-your-face party style. Either way, if you're not heading to Caramel for a martini, there's just no point.
