There is much to admire at Aureole, from the sleek water-and-glass decor by Adam Tihany, to the contemporary cuisine of chefs Joe and Megan Romano (a husband-and-wife team with a decade of experience at Palmer's restaurants). But the unforgettable feature that rises above the others -- literally -- and leaves even jaded gourmet diners speechless is a four-story, white-lit wine tower near the entrance that houses part of a 9,000-bottle selection purchased from a private collector. Showgirl-pretty "wine angels" ascend with the help of cables and pulleys to choose your trophy bottle. Aureole is a place to linger over a romantic dinner; anything less than two hours would be rushing the experience. The changing menu might feature pan-seared guinea hen, shell steak with caramelized onion-potato tart or filet mignon with marrow and parsley custard.
