The stunning front bar is equipped with enough tequila to change out the Rio Grande; diners can partake in a Mexican cucumber martini, blackberry mojito or Cadillac margarita before adjourning to the back kitchen, or seat themselves at one of the small booths and look over the gaming floor. A roving guacamole cart offers guests a choice of classic Mexico City guacamole, a chipotle adobo with pumpkin seeds and one with lobster and passion fruit. Sandoval's modern update of the quesadilla, flauta and empanada make all these finger foods worth sampling. Other innovative choices include a crispy red snapper, chicken breast with corn dumplings and Mexican meatballs with chipotle tomato sauce.
