Mesa Grill   

Celebrity chef Bobby Flay's first restaurant outside of New York City is a unique addition to Caesars Palace's array of award-winning establishments. With a palette of bright greens, blues, reds and yellows, the decor exudes high-energy. The 9,000 square-foot space is dominated by a 20 foot rotisserie with a grill and quesadilla oven. A mural of flames painted on the ceiling casts a fiery glow over the dining space, further adding to the "hot" atmosphere. More flames can be found on the carpet which covers the hardwood floors and on the handles of the glass front doors. The cuisine is pure Southwest combined with a high-class sensibility, offering seafood, chicken, veal and steak. Signature dishes include the tiger shrimp and roasted garlic corn tamale and the blue corn pancake with barbecued duck. Mesa Grill also features a tequila and mescal program, and a wine list that spans the globe. Be sure to leave room for dessert -- apple tarts to creme fraiche swirl ice cream await.
