When Mandalay Bay began putting concepts together for its restaurant/nightclub atop the sleek THEhotel, nothing less than exquisite would do. Alain Ducasse, the French chef extraordinaire behind the Plaza Athenee in Paris, Louis XV in Monaco and Mediterranean restaurant bearing his own name in New York, fashions the menu. And as with other Mandalay dining venues, the wine list is top notch. Equally stunning is the atmosphere in which diners take it all in, looking out across the city in a view that stretches for miles.
