Juliano's Raw   

Even skeptics of vegetarianism have to admit that Juliano's Raw has darn tasty food. A bite of guacamole vanquishes outmoded ideas of wheatgrass bars as the only option for a meat-free diet. Dishes such as the "rawvioli" (made from wafer-thin slices of vegetables and drizzled with pine nut cream and truffle oil) and more traditional-sounding plates such as the "cheezeburger" allow diners a wide array of options by which to test their raw mettle. Even desserts have a place in the raw diet; be sure to save room for gelato or apple pie. Chef Juliano promises that you'll start to feel lighter, more energetic after noshing one of his nutrient-rich, uncooked meals (the lack of heat, he says, helps the plants to retain their nutritious elements). While some dismiss raw cuisine as simply the latest food trend, they would do well to remember that humans ate raw food well before they overcame their fear of fire and threw a couple of prehistoric shrimp on the barbie.
