Hap and Barb Darroch have always been serious about their barbecue, widely recognized as among the finest in Arizona. But they grew serious about their restaurant when they finally moved it from a downtown trailer into a nice sit-down place on E. Washington with tables, booths and a counter with stools. Walls are painted with puckish murals of pigs and farm life. There's more seating outside on a shaded patio. A second location on Indian School is a takeout drive-thru. Hap is a connoisseur who scoffs at those who regard barbecue as roast beef slathered in gloppy, red sweet sauce. He smokes his St. Louis-cut spareribs overnight over hickory wood, producing juicy, tender barbecue that falls off the bone. In the final stages, he glazes it with a smoky brown sauce with a slight vinegary tang that compliments the meat without overpowering it. Besides ribs, Hap's serves pulled pork, beef brisket, chicken and hot links. The sides are on a par with the meat -- outstanding beans, sweet coleslaw and a broccoli-cheese casserole. Sandwiches are highly addictive, as are Hap's famous homemade pies.

My husband and I travel all over the United States and have been to Baby Blues as well as several other outstanding BBQ joints. I would love to say I've found better than Hap's but it hasn't happened yet.
