Certain things are accepted as absolute truths, without argument. As sure as Valley summers still sizzle, Pizzeria Bianco still serves the best gourmet pizza with the finest, freshest ingredients. And you'll have to wait nearly two hours to taste them. The pizzas are so good that every major food magazine and TV cooking show has featured Chris Bianco. The question isn't whether he serves the best pizza in town, it's whether Pizzeria Bianco is the best restaurant of any kind. Some national magazines insist it is. Bianco could move from his cramped bistro in Heritage Square to warehouse-size digs in Scottsdale and rake in a lot more money. But he won't do it, for the same reason he stopped serving lunch. It would leave him drained, and he'd be unable to lavish his personal attention on every dish that leaves the kitchen. If it's your first trip, know that you'll be sampling made-from-scratch pies -- fresh dough, homemade sauce, the best cheeses and garden-fresh herbs. Six pizzas are on the menu, all with vibrant flavors and a crisp, chewy crust. Bianco has a beer and wine bar next door in another restored house -- a cozy place to wait for your table. -- Cecil Tuck

I love good food, and respect talent, but as another poster wrote, I'd like to be respected in return. No restaurant, no matter how good the food, will get my repeat business if I am not treated as if my money matters. Unfortunately, so many people will wait for this pizza (and have waited, folks, for YEARS - no such luck that the fame is short-lived), that there is no incentive for the owner to change a thing. As delicious as Bianco's pizza is, I see the same arrogance reported by patrons in 2008 as I experienced a decade ago and see no reason yet to go back. I can make pretty damn good pizza from scratch at home, and I don't have to wait for hours or deal with arrogance. If you choose to wait, that's your business. If you think the arrogance is okay, fine. We all have different priorities.

WITH ALL THE HYPE WE EXPECTED MUCH MORE. WAIT INSANE! STAFF NOT GOOD. HAVING HAD 3 RESTAURANTS I WOULD HAVE FIRED THIS STAFF OR AT LEAST HAVE THEM GO THROUGH SOME WELCOME/GUEST/ TRAINING. THEY SIMPLY DID NOT CARE WHAT OUR EXPERIENCE WAS. THE PLACE MAJORS IN AROGANCE AND EGO...........M INORS IN PIZZA!!!!!! ENJOY THE RIDE CHRIS WITH THAT KIND OF EXPERIENCE.............IT WILL BE SHORT LIVED
