The aroma of fine cuts of beef and grilled seafood wafts through the Greentree Radisson at dinnertime. A concierge greets patrons and points them down a path through the lobby to an elegant restaurant known as The Prime House. Refined decor, "just-right" dimmed lighting and tastefully set tables complete the atmosphere. Patrons are a mix of locals, business persons and travelers dining on slightly pricey meat, seafood and pasta entrees. Many are there for the prime rib, slow roasted and served in its natural jus with a horseradish sauce. Three cuts are offered - - a 10-ounce ''Queen Cut,'' a 12-ounce ''Prime House Cut'' and a 16-ounce ''Pittsburgh Cut,'' which is preferred by the Steeltown locals. Maryland crabcakes with a spicy tomato relish and corn salsa also top diner's lists. -- Scott Amann
