Not only are The Linkery's sausages made fresh daily, but the fillings, spices and flavors change along with the dawn. There's actually one chef whose entire job is to formulate and stuff the restaurant's links. The benefits of housemade links include a lack of those nasty nitrates and preservatives you'd find in the average hot dog or sausage. Artisan bread and cheeses are tools of the kitchen's trade and add to the menu's uniqueness. Sausages stuffed in a hollowed-out fresh baked roll with sauerkraut come with a side salad and potato salad made with bright purple Peruvian potatoes. Burgers are anything but old-fashioned. They're topped with a grilled pineapple slice, fried egg, Gouda and peppery arugula. Veggie burgers and tofu are both made in-house for those who care to avoid meat, and get the same inventive treatments as the rest of the menu. Prawn skewers charbroiled in orange-chili marinade and braised lamb with mint salsa call for a glass of wine. Grilled pineapple and strawberries with balsamic reduction and vanilla ice cream is a grown up dessert that still makes you feel like a kid.
