Marc Felix, formerly the top chef at the Oak Room in New York's Plaza Hotel, has taken over the kitchen at St. Louis' Adam's Mark, a posh hotel in the shadow of the Gateway Arch. Felix hails from Lyons, which is notable for two reasons - it's St. Louis' French sister city, and it has what many gourmands regard as the finest culinary tradition of any French municipality, Paris not excepted. Felix has brought this Gallic heritage to Faust's menu, but -- in true nouvelle cuisine style -- he has incorporated influences from around the world, notably East Asia. The result is an ambitious and varied menu presented in one of the most luxurious settings in St. Louis. Seafood is flown in fresh daily, but for much of the produce, Faust's has chosen to seek out local producers from this agriculturally rich region. Felix has recently introduced what he calls "interactive cuisine," in which entrees are designed to mix and match, encouraging the members of a dinner party to share their orders. -- HW
