The real draw -- besides the late hours -- is the upscale atmosphere. Carnation colored linens adorn the small square tables which are crowned with crystal vases that brim with tropical flowers. The dining room is romantically lit with perfectly placed candles making for an intimate setting for that special occasion or a quiet spot to enjoy conversations with your pals. Ceviche specializes in tapas -- the small appetizer plates that are traditional fare in Spain. There are both hot and cold selections on the menu, with main ingredients like Spanish ham, sea bass, and quail. Accompanying ingredients include mussels, olives and almonds, often seasoned with garlic and olive oil. The idea is to order several different tapas and share them with everyone at your table.
