Water   

Like the sushi tapas that it is known for, Water is a highly creative, yet bite-sized restaurant, with lots of variety and not so many tables. The premise behind the Asian-themed eatery on Restaurant Row is simple: The dining experience should be just that -- an experience -- and guests should endeavor to sample as many tastes as possible. To that end, Water offers its popular sushi tapas, sashimi-grade fish and vegetables served with a dizzying array of sauces like spicy lime vinaigrette and Chinese garlic chive puree. Exotic ingredients like caviar, truffles, and mango pervade the menu which also includes more traditional entrees like spicy and crunchy tuna, a customer favorite, as well as salads. About the only downside of Water is its size. With only a handful of tables and a growing legion of low-carb-eating fans, a wait is practically guaranteed. Consider it all part of the experience.
